Welcome, Doris! Congratulations on your e-cookbook “23 Delicious Recipes for Diabetics.”
I have had a convoluted relationship with food from a very early age, I felt after being diagnosed at the age of thirty-three I’d take it upon myself to cultivate a union with cooking and better understand how certain foods break down in our bodies.
Can you share where the book idea came about?
It came during a mastermind session in December 2020 with my current business mentor. It was literally thirty-three minutes into the conversation, he suggested I create a cookbook for diabetics.
I had to think about it for a moment as I have never explored the culinary scene. As the conversation continued, 23 Delicious Recipes for Diabetics was on its way to those looking for low-carb yet delicious alternatives to cooking at all levels.
What do you hope readers learn from your e-cookbook?
That we are truly energy, all the energy we ever need is within us, and you won’t find it in a can or product. We should be eating to fuel our bodies as they are temples. Just remember, we are what we consume. Isn’t it time we clear the clutter, nonsense, and foolishness from our lives, which also includes toxic food, people, and environments?

What is your favorite recipe from your e-cookbook?
I have so many - can I say all of them? If I had to choose one it would definitely be the Grilled Salmon on page 42 and, of course, who doesn’t love a Chocolate Chip Cookie, right?

Tell us about your background & modeling career.
I started modeling in 2012 for my own personal website and blog titled ‘Rich in Love’. It started from being rejected at the age of 17 through a number of modeling agencies. I moved on and went to college, majoring in marketing, so who knew at the age of 31 I would create ‘Rich in Love’ and become the founder, model, and writer, utilizing all of my skills and talents on a media platform that would soon become a website for diabetes awareness, PR services, and vintage style.
What’s next for you?
I plan to rerelease the e-cookbook as a hardcover version in the summer of 2023 with a possible on-air element, not to mention a few upcoming magazines to complement it.
